How do I see all the upcoming events that someone is organizing?

To do this, you need to visit their player profile. You can either do this by finding them using the Search function (top-right corner) or by tapping their name/photo from anywhere in the app. 

On their profile player, select the 'Events' tab. This will show you a list of all upcoming events they're organizing (if applicable).
